Disney Summertime Recipes!

Beth has been to Walt Disney World a massive 15 times and is looking forward to her 16th next month!! She's also been lucky enough to visit to Disneyland in California :) It definitely shows because her blog because it's jam-packed full of awesome Disney info and tips! She also has a fantastically long list of all the characters she's met in Disney Parks over the years - which is so much fun to click through!

Disney Summer Recipes!

With summer quickly coming to an end, I’m reminded of the things I love about summer: no school, my birthday, swimming pools, beach trips, the 4th of July, fireworks ice cream and picnics- to name a few!

When Manda asked me to contribute to her series of “Summertime and Disney” my mind started racing as I thought about Walt Disney World in Florida: Typhoon Lagoon, ice cream, Blizzard Beach, humidity, ice cream, crowds, summer showers, fireworks, heat and long lines!  The more I started thinking about Summertime and Disney, I thought about how our family tends to avoid WDW in the summer (for many of the reasons mentioned above) and we stay home and cook out on the grill and have picnics during the summer. (We try to travel to WDW in the off season!) When I started thinking about picnics and Disney, I thought about Flame Tree BBQ at Animal Kingdom. That’s when I found the recipe for their BBQ sauce and knew I had to try it at home!

Flame Tree BBQ Sauce- Animal Kingdom
58 ozs Ketchup

7 ozs Rice Wine Vinegar

4 ozs Molasses

2 Tbsps Chili Powder

2 Tbsps Paprika

2 tsps Tumeric

2 tsps Ground Cumin

2 Tbsps Garlic Salt

1/2 tsp Ground Cloves

2 Tbsps Onion Powder

16 ozs Water

2 Tbsps Brown Sugar

Method of preparation:
1. In a medium saucepan, combine all the ingredients.
2. Bring the mixture to a simmer over medium heat, reduce the heat to low and cook at a low simmer, stirring frequently, for 35 minutes or until thickened.
Use immediately or store, covered and chilled, for up to 2 weeks.

After finding the recipe for the BBQ sauce, I thought I should do a little more research and create an entire summetime meal based on recipes from Walt Disney World.  Here’s my menu with the recipes below:
BarBQue Chicken with Flame Tree BBQ Sauce, Pasta Salad from Boma, Broccoli Salad from Cape May, Green Beans from Liberty Tree Tavern, and Strawberry Shortcake from the Hoop De Doo Musical Review!

Bertina's Pasta Salad 
Boma - Flavors of Africa 
Animal Kingdom Lodge

1 pound Tri-Color Pasta (4 cups after cooked) 
¾ cup Red Onion, diced fine

1 cup Red Bell Pepper, diced fine

1 cup Green Bell Pepper, diced fine

1 cup Celery, diced

1 cup Mayonnaise

½ teaspoon Granulated Garlic

1 ¾ tablespoons Sugar

½ teaspoon Ground Turmeric, toasted

1 tablespoon Curry Powder, toasted

To taste Salt and Pepper

Method of preparation: 

1. Cook tri-color pasta and allow to cool.
2. In a large mixing bowl, mix the cooled pasta and all the other ingredients. Check the seasoning and adjust if needed.

Broccoli Cranberry Salad Cape May Buffet
Beach Club

4 cups broccoli flowerettes (chopped fine)

1/4 cup diced celery

1 8 oz. pkg. dried cranberries

1/4 cup shelled sunflower seeds


1 cup mayonnaise

1/4 cup sugar

1/4 cup vinegar

Method of Preparation: 
In a large bowl, combine broccoli, cranberries, sunflower seeds and celery. Pour dressing over and toss. Keep refrigerated.

Garlic Beans

¼ Pounds Green Beans, yellow wax beans and carrots 

1 Tablespoon Garlic 

2 Tablespoon Olive Oil 

1 Teaspoon Kosher salt 

½ Teaspoon Ground black pepper

Method of Preparation:

Get a sauté pan hot. Add the olive oil to the pan. When oil is hot add the garlic and cook for 20 seconds. Next add the green beans and the carrots. Finish by adding the salt and pepper.

Strawberry Shortcake
Hoop-de-doo Musical Review 
Fort Wilderness Resort & Campground
Yellow Pound Cake 

Step 1 

1 ¼ pound Cake Flour 

1 ¼ pound Granulated Sugar 

¼ ounce Baking Powder 

Pinch Nutmeg 

½ ounce Salt 

½ pound Shortening 

¼ pound Butter 

8 ounces Milk 

Step 2 

6 Eggs 

4 ounces Milk 

½ ounce Vanilla 
(Almond Extract can be substituted for vanilla) 

Add whipped cream and Smucker's Frozen Strawberries (thawed) to taste.

Method of Preparation:
1. Sift and blend all dry ingredients from Step 1 together. Add shortening, butter, milk, and mix 5-7 minutes at low speed. 

2. Combine all ingredients from Step 2 together and blend lightly. 

3. Add liquid mix from Step 2 to Step 1 in three parts, scraping down bowl between. 
4. Bake at 350 degrees until tester inserted into cake comes out clean. 

5. Add toppings to taste.

Now that I have all these recipes collected, it’s time to get to the grocery store and into the kitchen to start my creations!  I hope you will find time to make at least one of these summertime recipes.  In the meantime, if you aren’t able to make these recipes or aren’t much of a cook, enjoy these images of my favorite summer treats at Walt Disney World in Florida!

mmmmmm mmmmmm mmmmmm! Those recipes all sound delish! Not to mention the tasty treats at the end :). Two more sleeps to Disney for me...and all those tasty treats!
